What You Can Expect From An Oster Bread Machine
With its features, baking and kneading cycles, express bake and keen price the Oster 5838 ExpressBake bread machine is an attractive proposition for many shoppers looking for a home bread maker. While it's not the best machine on the market, it is perhaps the best you can buy at this price tag.
You could best describe the Oster 5838 bread machine as a good all rounder best suited for those who want to bake simple to moderately demanding loaves with consistent results. This breadmaker comes with features you would expect; delay timer, a variety of bake and dough cycles, and an express bake cycle. It also has an attractive appearance with plastic white exterior and rounded corners giving the whole appliance an oval shape. There is a large window and the control panel is easy to use.
There may not be as many bread or dough settings as with other, more expensive models like the Zojirushi bread machine, and you can't program your own as you can with the Breadman bread machine, but there's enough to satisfy all but the serious baker. In all, there are 8 different settings; basic, whole wheat, 2 ExpressBake cycles (60 and 80 minutes), French, sweet, dough, and bake. The Oster appliance makes horizontal, 1, 1.5 or 2lb loaves with 3 crust color settings of light, medium and dark.
Other features include an audible signal that tells you when you can add extra ingredients like nuts and dried fruit, a 13 hour delay bake timer and a 60 minute warmer after baking.
What's impressive about the Oster bread machine is the ExpressBake cycle; it can bake a loaf in 60 minutes from scratch - though you'll need to add another 10 minutes to allow the loaf to cool.
However, there are some negative things to be said about the Oster. Some are niggardly points like not being able to set the delay timer on the dough only setting and not being able to set the desired crust color on the ExpressBake cycle - you get a medium crust with this cycle.
But there are some more serious ones. At times the mixing paddle fails to mix all the flour in the pan. You end up with small deposits in the corners. This isn't a disaster as you just end up with a loaf with floury corners - you can peep through the window and check the mix and, if necessary you can use a rubber spatula to make sure all the ingredients are mixed. This problem seems to occur more often when baking a 1lb loaf when there isn’t as much dough to reach the corners of the pan.
The biggest problem is that when making a heavy 2lb mix, such as a fruit cake, the motor in the machine isn't really up to the job of mixing all the ingredients properly; this is where more expensive models like the Zojirushi bread machine really earn their keep. So, if you're planning on baking large loaves of heavy mixes then you should look at upgrading to another model.
But for just about every other type of baking, the Oster bread machine is an excellent appliance and it has a very good customer rating - only more serious baker reviews give the Oster a less than favorable score. And, as most people who use bread makers are looking for one that will bake most types of bread but not all, this machine will satisfy their baking requirements.
